It is not advisable to remove safety switches, custom build or not the "SAFETY SWITCHES" are there for a reason; safety.

There is a good chance the wiring diagram posted for the 3 amp charging system is not correct. Notice the headlamps are powered by their own stator winding and only work with the engine running. Posted October 9, 2021. I just fixed one of those. I very carefully cut the top (on mine it is a black plate) off with a razor saw. This allowed access to the internal switch components. I polished the contact points, increased the tension in the moving contact by bending it a little.Terry, for the purpose of checking stator windings, the "ringer" is useless. The ringer generally is set up to ring at anything under a couple hundred ohms resistance. A good stator winding will be a near short - but not shorted.
